Like rosemary, thyme has many species: there are about 200 different ones, mainly found in Europe and southern regions. While they are very often confused, each species of thyme has a different biochemical composition, with its own characteristics. Organic thymol thyme or Thymus vulgaris is a small shrub from the Lamiaceae family. With very small leaves, it produces pretty white to pink-violet flowers.

Cultivation & Origin
Originally from Europe, thyme is one of the most appreciated and widely used condiments in cooking, especially Mediterranean cuisine. While its aromatic power has been widely used over the centuries, its therapeutic and medicinal properties have been and still are renowned. During Ancient Greece, thyme was used as incense in funeral rites, as it was in Egypt where it was used for embalming mummies. Today, thyme is part of the herbs of Provence and is used as a seasoning, as well as for its essential oil with multiple properties.
