A small tree that can reach a height of 5 meters, the bergamot tree is part of the Rutaceae family, like the sweet orange and lemon tree.
With large, elongated and serrated leaves, the bergamot tree produces fruits that resemble oranges, except that their flesh is rather green and has a smooth, thick yellow skin. Acidic and bitter, the flavor of bergamot is characteristic and powerful.

Cultivation & Origin
Since the 18th century, the bergamot tree has been mainly cultivated in Italy in the Calabria region, but it can also be found in Morocco, Portugal and Ivory Coast. It is believed to be a cross between bitter orange and lime.
The fruit is the most used part of the plant, both in culinary use and in perfumery or cosmetics. Bergamot essential oil comes from cold pressing the pericarp of the fruit.
Today, bergamot essential oil is found in many dishes, drinks, perfumes and confections. It is the main ingredient of Earl Grey black tea, and is the pride of the city of Nancy with the famous bergamot candies! It is found in some liqueurs, biscuits or even in tagines in the form of candied fruit. In perfumery, it is used in the composition of many colognes.
