Sweet fennel or common fennel is a biennial perennial plant belonging to the Apiaceae family. Used as a vegetable, the aromatic plant grows to about 1.50 to 2.80 m tall. The fennel stem is persistent, grooved, and shiny. The filiform and elongated leaves have many strips. Fennel flowers between August and September. Its very fragrant flowers are grouped in flat umbels and measure between 7 to 10 cm.

Cultivation & Origin

A Mediterranean plant, fennel is mainly cultivated in Southern France, Italy, and Spain. It is a winter and spring vegetable: it is consumed between late November and early April in salads, as a side dish for fish or braised. While fennel has found its place in our kitchens, it was already used as a condiment in antiquity and its cultivation began in the Middle Ages, in Tuscany. Fennel also had a special symbolism in Roman times: gladiators who emerged victorious from combat received a fennel wreath as a reward! It can be combined with other essential oils such as exotic basil, diluted in a vegetable oil, before applying to the chest.
